We make tiramisu the way they make it in Italy. We soak dry Savoiardi-type soletilla sponges in coffee and coat them with a generous layer of cream, that includes Mascarpone cheese, egg yolk, dairy cream and sugar, and dust everything with cocoa. Contrasting flavours to seduce the palate.
