We prepare these three rectangular focaccias with a fluffy crumb, using sourdough, extra virgin olive oil, and semolina, made partially by hand following a double fermentation process, and bake them in a stone deck oven. Thick, rectangular focaccias that stand out for the aluminum mold in which they are presented, making them easier to handle.
