Wide, ciabatta-type loaf with rounded ends, natural grigne and the characteristic honeycomb crumb. The medium-thick crust is enhanced by cooked flour, that gives it a rustic, mottled appearance. This is a light bread, and it has an authentic flavour from the rye flour and sourdough, the result of the Saint Honoré process.
